It started as an argument. Someone bit into a perfectly average donut, said the line above out loud, and then — as these things go — had to prove it. Forty-something batches later the neighbours had stopped asking what smelled so good and simply started showing up. One cousin gained four kilos and maintains, to this day, that it was strictly for research.
Somewhere around batch thirty-one the dough finally behaved: soft enough to sit in a box without losing its shape, and soft enough to give way the moment you bite in. That's the pop we named the place after. The rules haven't moved since — it has to be fluffy, it has to be fresh, and if it's filled, it has to be properly gooey. Anything that misses becomes staff breakfast, which is also why nothing is ever sold the next day. Not nobility. We just eat the evidence.

Made this morning, gone by tonight. Nothing sits overnight, nothing gets reheated, and nothing gets a second chance at the counter.
